  • 2 tbsp olive oil
  • 1 large onion (finely chopped)
  • 3 cloves garlic (minced)
  • 6 medium potatoes (peeled and thinly sliced)
  • 1 l chicken or vegetable broth
  • 300 g kale (thinly sliced, you can also use collard greens)
  • 200 g chorizo or Portuguese sausage, sliced
  • salt and pepper (to taste)
  • 1 splash extra virgin olive oil (for drizzling, optional)
Instructions
    Prepare the Base:
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until the onion is translucent and the garlic is fragrant, about 5 minutes.
  3. Cook the Potatoes:
  4. Add the thinly sliced potatoes to the pot and stir to coat them in the oil and onion mixture.
  5. Pour in the chicken or vegetable broth. Bring to a boil, then reduce the heat to a simmer.
  6. Cook until the potatoes are very tender, about 20 minutes.
  7. Blend the Soup:
  8. Use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, you can transfer the soup in batches to a blender and puree it, then return it to the pot.
  9. Add the Greens and Chorizo:
  10. Add the thinly sliced kale to the pot. Let it cook until tender, about 10 minutes.
  11. Add the sliced chorizo or Portuguese sausage and cook for another 5 minutes until the sausage is heated through.
  12. Season and Serve:
  13. Taste the soup and season with salt and pepper as needed.
  14. Ladle the soup into bowls and drizzle with a bit of extra virgin olive oil if desired.
