  • 3 large egg yolks
  • 1 tbsp lemon juice
  • 1/2 cup unsalted butter, melted
  • Pinch of cayenne pepper (optional)
  • salt to taste
  • 4 large eggs
  • 2 English muffins (split)
  • 4 slices Canadian bacon (or ham)
  • 2 tbsp white vinegar
  • Salt and pepper to taste
  • fresh chives (or parsley for garnish, optional)
Instructions
    Prepare the Hollandaise Sauce:
  1. In a stainless steel or heatproof bowl, whisk together the egg yolks and lemon juice until the mixture is thickened and doubled in volume.
  2. Place the bowl over a pot of gently simmering water (make sure the bottom of the bowl doesn't touch the water) and continue to whisk rapidly. Be careful not to let the eggs get too hot or they will scramble.
  3. Slowly drizzle in the melted butter while continuing to whisk. Whisk until the sauce is thickened and smooth.
  4. Remove from heat, and whisk in the cayenne pepper and salt to taste. Keep the sauce warm.
  5. Poach the Eggs:
  6. Fill a large saucepan with water and bring it to a gentle simmer. Add the white vinegar.
  7. Crack each egg into a small bowl or cup.
