Ingredients
  • 500 g flour
  • 125 g butter (melted, but cold)
  • 1 egg
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1/2 tsp powdered baking powder
  • 1/2 tbsp vinegar
  • 70 ml water
  • 1/2 tsp gum arabic (blended with very little sugar)
  • saffron pistils (diluted in a little orange blossom water)
  • 2 tsp powder cinnamon
  • 20 ganise seeds
  • 1/2 cup olive oil
  • 500 ml honey
  • sesame
  • 1 tbsp orange blossom water
  • seed oil
Instructions
  1. Put all the ingredients in a bowl and start kneading, adding water little by little until you get a smooth dough that should not stick together.
  2. Divide the dough into balls and then roll them out as thinly as possible: either with a rolling pin or with a pasta machine, passing them twice in a large gauge and then a medium one. You will get thin and very crispy griwechs.
  3. Cut into rectangles and then carve internally into strips, without reaching the ends, and give the typical braid shape.
  4. Meanwhile, boil the honey. Turn off and add two tablespoons of orange blossom.
  5. Fry the griwechs and then lay them on paper towels and let them drain.
  6. Finally when they have cooled dip them in warm honey scented with orange blossom water, drain off the excess and sprinkle them with sesame seeds.
  7. Let cool and serve.
  8. Your traditional Griwech is ready. شهية طيبة!
