Ingredients
  • 4 eggs
  • 110 g powdered sugar
  • 600 ml milk
  • 1 vanilla pod
  • 1 pinch salt
  • 30 g almond
  • 60 g sugar (cube)
  • 1/2 lemon
Instructions
  1. Boil the milk with the vanilla pod, split lengthwise and scraped clean.
  2. Leave to infuse for 5 minutes, then remove the pod.
  3. Separate egg yolks and beat with 80g sugar.
  4. Add the hot milk, then return to a low heat to thicken the mixture. Stir constantly with a wooden spoon, without boiling the cream. The cream is set when the white foam on the surface disappears.
  5. Place in the fridge once cooled.
  6. Bring 2 l of water to the boil in a large saucepan.
  7. Beat egg whites with a pinch of salt and gently add 30 g sugar.
  8. Form egg-white balls with two tablespoons and cook on all sides in boiling water.
  9. Count for 1 min and drain on absorbent paper.
  10. Brown the almonds in a frying pan.
  11. Make caramel with sugar cubes, a dash of lemon and 2 tablespoons of water.
  12. Place the cream in a shallow dish. Top with the egg whites, then decorate with caramel drizzle and almonds.
  13. Your traditional Île Flottante is ready. Bon Appétit!
