  • 4 ripe bananas (not overly ripe)
  • 1 cup coconut milk
  • 1 tbsp sugar (adjust to taste)
  • 1 pinch salt
  • 1 tsp vanilla extract
  • 1 cinnamon stick (or a pinch of ground cinnamon, optional)
Instructions
    Peel and Prepare Bananas:
  1. Peel the bananas and slice them lengthwise into halves or quarters, depending on the size of the bananas. You want them to be in large pieces.
  2. Cook the Bananas:
  3. In a saucepan, add the coconut milk, sugar, salt, and cinnamon stick (if using). Stir well to combine.
  4. Place the saucepan over medium heat and bring the mixture to a gentle boil.
  5. Add the banana slices to the saucepan. Make sure they are submerged in the coconut milk mixture.
  6. Lower the heat and let it simmer gently for about 10-15 minutes, or until the bananas are tender but not mushy.
  7. Flavor and Finish:
  8. Add the vanilla extract in the last few minutes of cooking and gently stir to incorporate.
  9. Remove the cinnamon stick if used.
  10. Taste and adjust the sweetness or add a bit more salt if desired.
