Ingredients
  • 200 g wheat flour
  • 1/2 tsp salt
  • 1 egg (medium)
  • 330 ml sparkling water
  • 500 g cod fillet
  • 4 tsp fish spice mix (salt, white pepper, paprika, ground mustard, curry powder, nutmeg, onion powder, and dried herbs, such as dill or parsley)
Instructions
  1. Heat the oil in a (deep fryer) pan to 180 °C. If necessary, check the temperature with a kitchen thermometer.
  2. In the meantime, mix the flour and salt in a large bowl. Add the egg and sparkling water and stir with a whisk until a batter forms.

  3. Cut the cod fillet into cubes of approx. 3-4 cm. Sprinkle with ⅔ of the herb mix and stir. Add the fish to the batter in the bowl.
  4. Scoop the cod out of the batter with a slotted spoon, tap the slotted spoon a few times on the edge of the bowl so that the excess batter runs off. Deep-fry in batches for 3-4 minutes until light brown and cooked through.
  5. Drain the kibbeling on kitchen paper and sprinkle with the rest of the herb mix.
  6. Your homemade kibbeling is ready. Eet smakelijk!
