Ingredients
    For Dough:
  • 3 cups whole wheat flour
  • 2,5 cups fine semolina
  • 750 ml water
  • 2 tsp salt
  • olive oil (as needed to form the dough)
  • For Filling:
  • 100 ml water
  • 50 grams grated carrots
  • 1 onion (sliced)
  • 2 tomatoes (chopped)
  • 2 tsp homemade tomato paste
  • 1 tbsp olive oil
  • Spice Ingredients:
  • 1 clove garlic
  • 1 tsp cumin
  • 1 tsp salt
  • 1 pinch black pepper
Instructions
    Dough:
  1. Bring a large bowl. Add flour, semolina, salt and water.
  2. Mix the ingredients well to get a consistent dough.
  3. Cover it with plastic wrap and leave it to rest for 8-12 hours.
  4. Divide the dough into medium-sized balls of equal size.
  5. Sprinkle it with a little oil and cover it with plastic wrap again.
  6. Leave it to rest for about an hour.
  7. Filling:
  8. Heat the oil in a frying pan over medium heat.
  9. Add the onions and stir until they wilt.
  10. Add the carrots and mix them with the onions and leave them on the heat for several minutes.
  11. Add the tomatoes, tomato paste and cumin.
  12. Mash the tomatoes a little with a spoon, then add the water.
  13. Leave the ingredients on the heat for 10 minutes.
  14. Preparing Mahjouba:
  15. Divide the dough into 20 equal-sized balls.
  16. Spread the dough balls one by one on a flat surface with your hands.
  17. Spread the dough to become very thin in a circular shape.
  18. Spray a little oil to facilitate the spreading process.
  19. Hold the edge of the dough with your hands, and fold it in half.
  20. Add about a tablespoon of the filling, and spread it.
  21. Fold the opposite side of the dough over the filling.
  22. Hold the right edge and fold it in half.
  23. Hold the left edge and fold it as well, to become a rectangle.
  24. Transfer the Muhajib to a flat pan, and place it on the fire.
  25. Fry it for 5 minutes on each side until it becomes brown.
  26. Serve the Algerian Muhajib hot.
