  • 4 tomatoes
  • 2 cucumbers
  • 1 onion
  • 4 peppers (roasted)
  • 4 sprigs parsley
  • 120 g cheese
  • 4 hot peppers
  • 4 olives
  • 2 tbsp vinegar
  • 6 tbsp oil
  • 1 tsp salt
Instructions
  1. Roast the peppers on the stove or in the oven. When hot, transfer them to a container with a lid without waiting. When they are warm, peel them and remove the seeds.

  2. Wash the tomatoes and cut them into small cubes.

  3. Peel the cucumbers into strips. Cut them into cubes of the same size as the tomatoes.

  4. Slice the onion very thinly and rub it with a few pinches of salt until it releases its juice.

  5. Place the prepared vegetables in a large bowl. Prepare a sauce by whisking vinegar, salt and oil. Pour the sauce over the vegetables.

  6. Finely chop the parsley. Place on top of the vegetables.

  7. Grate the cheese and cover the salad with the grated cheese. Top with olives, hot peppers and a pinch of parsley. Shopska salad is ready. Bon Appetit!
