Ingredients
    For the Filling:
  • 500 g beef steak (chuck or rump)
  • 1 onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 tbsp olive oil
  • 2 cups beef stock
  • 1 tbsp worcestershire sauce
  • 1 tbsp tomato paste
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • 2 tbsp cornstarch (mixed with 2 tbsp cold water)
  • salt (to taste)
  • 1 cup grated cheddar cheese
  • For the Pastry:
  • 2 sheets puff pastry
  • 1 egg (beaten, for egg wash)
  • pepper (to taste)
Instructions
    Cook the Filling:
  1. Heat olive oil in a large skillet over medium-high heat. Sear the beef until browned. Remove and set aside.
  2. In the same pan, sauté the onion and garlic until softened.
  3. Return the beef to the pan. Add the beef stock, Worcestershire sauce, tomato paste, and thyme. Stir well.
  4. Reduce the heat to low, cover, and simmer for 1-1.5 hours, or until the beef is tender.
  5. Stir in the cornstarch mixture to thicken the sauce. Simmer for an additional 5 minutes. Season with salt and pepper. Let the filling cool completely.
  6. Assemble the Pie:
  7. Preheat the oven to 200°C (400°F).
  8. Line a pie dish with one sheet of puff pastry, trimming any excess. Prick the base with a fork.
  9. Spoon the cooled beef filling into the pastry shell. Sprinkle the grated cheese evenly on top.
  10. Cover the pie with the second sheet of puff pastry. Seal the edges by pressing down with a fork. Trim the excess pastry.
  11. Brush the top with beaten egg and make a small slit in the center to allow steam to escape.
  12. Bake the Pie:
  13. Place the pie in the preheated oven and bake for 25-30 minutes, or until the pastry is golden brown and puffed.
  14. Let the pie cool slightly before slicing. Serve with tomato sauce or your favorite sides.
