Tajine Zitoun is a traditional casserole dish unique to the capital Algeria. It takes its name from the clay pot called "tajin" in which it is cooked. It is world famous for being a dish made with olives. There are also varieties made with lamb meat or meatballs instead of chicken meat.
Put the olives in a deep pot, add enough warm water to cover them and boil them over medium-low heat for about 15 minutes.
After it boils sufficiently, drain the water and place the olives on a plate.
Put oil in your pot and heat it. Add onion, garlic and chicken. Cook gently, stirring, for a few minutes. Add cumin, black pepper and salt and mix again.
Add green olives, mushrooms and salt and mix.
Add enough boiling water to cover it. Bake for 35-40 minutes until the chicken is fully cooked.
Garnish with parsley and serve hot. Bon Appetit!
