Ingredients
  • 3 cups Iranian rice
  • 1 whole chicken breast
  • 1 cup plain yogurt
  • 1 onion (medium)
  • 2 egg yolks
  • 1 tbsp rose water
  • 50 g butter
  • 100 g barberry
  • 1 tsp powdered sugar
  • 4 tbsp brewed saffron
  • salt
  • black pepper
  • Ample cinnamon and pistachio slices
  • Ample turmeric and oil
Instructions
  1. To prepare the Majlesi chicken stew, first put the chicken meat, two glasses of water, some turmeric, cinnamon, and an onion in a suitable pot, then place the pot on medium heat until the chicken is cooked.
  2. To make the chicken taste better, it is better to let all the water in the pot drain, this will allow the chicken to absorb the flavor of all the spices. After removing the chicken from the heat and letting it cool slightly, chop it into shreds.
  3. After shredding the chicken, put it in a pan with a little liquid oil and roast it for a while, then add some turmeric, cinnamon, and black pepper to the chicken and continue roasting until the chicken is evenly coated with the spices, then set the chicken aside.
  4. In this step, we rinse the barberries that we have soaked for 20 minutes, then roast them in a suitable pan with powdered sugar and some butter or liquid oil until the color of the barberries becomes bright. Then we set the barberries aside.
  5. Now, depending on the type, soak the rice for between 30 minutes and 3 hours with 1 teaspoon of salt and lukewarm water. Then, we put a suitable pot on the heat and fill it halfway with water and let the water boil.
  6. After the water boils, add 1 teaspoon of salt and 1 tablespoon of liquid oil to the pot. Next, we add the soaked rice to the boiling water and let the rice cook for 7 to 10 minutes.
  7. When the rice grains are completely soft but the kernels are hard and sticky, we need to rinse the rice. After we have rinsed the rice, we set it aside. Next, we pour the egg yolks into a large bowl.
  8. In this step, we mix the egg yolks until they are no longer lumpy, then add the condensed yogurt with rose water and saffron to the bowl and mix well until the ingredients are completely mixed and smooth.
  9. In this step, we add the rinsed rice to the bowl containing the egg and yogurt mixture and mix gently until they are smooth. Next, we grease the pot we have intended for cooking the tah chin with a little oil.
  10. At this stage, pour half of the mixture into the bottom of the pot and press it well with the back of a spoon, then pour the roasted chicken and barberry over the rice. Next, add the remaining rice mixture to the pot.
  11. Now, press the rice again with the back of a spoon so that the tahchin does not fall apart after cooking. Next, divide the butter into small pieces and spread it over the rice. Now, place the pot on very low heat.
  12. It takes about 45 minutes to an hour to steep the tahchin. Finally, after the tahchin is finished cooking, we gently turn it over onto a suitable dish, then decorate it with pistachio and barberry slices.
