Ingredients
  • 1 cup semolina
  • 1 cup warm water
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 lemon (grated)
  • 1 tbsp sugar
  • 1/4 tsp salt
  • vegetable oil (for frying as needed)
  • 250 g honey
Instructions
  1. Bring a large pot, add sugar, water, oil and salt.
  2. Place the pot on the fire, and leave the mixture until it starts to boil.
  3. Add the semolina, and stir the mixture until it becomes one mass.
  4. Remove from heat, stir with a wooden spoon, and let cool slightly.
  5. Add one egg and lemon zest to the mixture, and stir.
  6. Add the second egg, and mix again.
  7. Leave the mixture aside for 10 minutes.
  8. Steps for frying Zalabia
  9. Heat vegetable oil over medium heat.
  10. Put the mixture in a pastry bag or tube.
  11. Make finger-like shapes from the dough.
  12. Put them directly in the oil.
  13. Wait until they become golden on all sides.
  14. Remove from heat, and put them directly in honey.
  15. Transfer the Zalabia with semolina to a serving dish, and serve them warm or cold immediately.
