Step 1: Bloom the Gelatin

  1. Place the gelatin sheets into a bowl of cold water. Let them soak for about 5 to 10 minutes until they become completely soft and pliable.

Step 2: Infuse the Cream

  1. In a small saucepan, combine the heavy cream, sugar, the scraped vanilla seeds, and the empty vanilla pod. Place the pan over low heat and stir gently until the sugar dissolves.
  2. Bring the mixture just to a simmerโ€”do not let it boil. As soon as you see tiny bubbles forming around the edges, remove the pan from the heat and take out the vanilla pod.

Step 3: Dissolve and Chill

  1. Squeeze the excess water out of the softened gelatin sheets with your hands. Drop the gelatin into the warm cream mixture and whisk immediately until completely dissolved and smooth.
  2. Pour the liquid into 4 ramekins or dessert glasses. Let them cool down to room temperature, then cover and refrigerate for at least 5 to 6 hours (overnight is highly recommended) until completely set.

Step 4: Prepare the Red Berry Sauce

  1. Combine the mixed berries, sugar, and lemon juice in a blender. Blend until completely smooth. Pass the puree through a fine-mesh strainer to remove any small seeds. Transfer the smooth liquid into a small saucepan and simmer over low heat for about 5 minutes until the sugar fully dissolves and the sauce gets a beautiful glaze. Let it cool completely.

Step 5: Unmold and Serve

  1. To unmold the panna cotta, dip the bottom of each ramekin into hot water for just a few seconds. Run a thin knife carefully around the inside edge, then invert the ramekin onto a serving plate.
  2. Give it a gentle shake to release the dessert, letting it display its iconic traditional jiggle. Pour a generous amount of the cooled red berry sauce over the top, garnish with a few fresh berries, and serve immediately.
