500 g cranberries

Instructions

  1. Prepare the berries for homemade cranberry juice. To do this, carefully sort them out, separating out the spoiled and bruised ones, then place them in a colander and rinse gently under running water.
  2. Put the cranberries on paper towels and let them dry. Then pour them into a bowl and crush the pistils. Squeeze the released juice through cheesecloth folded in half into a glass container. Put it in the refrigerator until use.
  3. Put the bruised berries remaining in the cheesecloth into a saucepan. Pour water over them, bring to a boil and simmer for 3-4 minutes. Strain the broth through cheesecloth.
  4. Let the broth cool to 50°C. Add honey and stir. Pour in the remaining freshly squeezed cranberry juice. Stir again. Let the homemade cranberry juice cool completely and serve.
