Prepare the Filling:

  1. Heat olive oil in a large skillet over medium heat. Add chopped onions and garlic, sauté until soft and translucent.
  2. Add ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.
  3. Stir in tomato paste, Worcestershire sauce, soy sauce, dried thyme, dried rosemary, salt, and pepper. Cook for another 2 minutes.
  4. Sprinkle flour over the beef mixture and stir to combine. Cook for 1-2 minutes.
  5. Slowly pour in beef broth while stirring continuously. Bring the mixture to a simmer and cook until the sauce thickens. Remove from heat and let it cool.

Prepare the Pastry:

  1. Preheat your oven to 200°C (400°F).
  2. Roll out the puff pastry sheets on a lightly floured surface. Using a round cutter or a bowl, cut out circles from the pastry. These will be the bases and the tops of your pies.
  3. Line a muffin tin with the larger pastry circles, pressing them gently into the molds.

Bake:

  1. Spoon the cooled meat filling into each pastry-lined muffin tin, filling them almost to the top.
  2. Place the smaller pastry circles on top of each pie. Press the edges together to seal.
  3. If desired, brush the tops of the pies with beaten egg for a golden finish.

Assemble the Pies:

  1. Place the pies in the preheated oven and bake for 20-25 minutes, or until the pastry is golden brown and crisp.
  2. Remove from the oven and let them cool for a few minutes before serving.
