  3. Slowly drizzle in the melted butter while continuing to whisk. Whisk until the sauce is thickened and smooth.
  4. Remove from heat, and whisk in the cayenne pepper and salt to taste. Keep the sauce warm.

Poach the Eggs:

  1. Fill a large saucepan with water and bring it to a gentle simmer. Add the white vinegar.
