Often enjoyed as a snack or appetizer, Cheese Fatayer represents a significant part of Kuwait’s rich culinary heritage.

A Glimpse into History

The origins of Cheese Fatayer trace back to the Levant region, where similar stuffed pastries have remained staples for centuries. In Kuwait, local chefs adapted these delightful pastries to reflect regional tastes and ingredients, establishing them as cherished elements of the national cuisine. Traditionally, families prepare Cheese Fatayer for special occasions and gatherings, showcasing the importance of hospitality in Kuwaiti culture.

Cultural Significance: A Symbol of Hospitality

In Kuwaiti culture, food plays a vital role in bringing people together. Sharing these pastries with friends and family expresses love and appreciation. Moreover, the act of enjoying Cheese Fatayer together fosters connections and creates lasting memories, making it a beloved dish in many households.

The Flavorful Filling

At the heart of Cheese Fatayer lies the delectable cheese filling, which typically features a mix of local cheeses such as Akkawi or mozzarella. Additionally, cooks season the filling with herbs and spices, enhancing its rich flavor. The chefs wrap the pastries in soft, flaky dough, creating a delightful contrast between the crispy exterior and the gooey cheese inside. Each bite offers a burst of flavor that reflects the culinary traditions of the region.

Modern Twists on a Classic

While traditional Kuwait Cheese Fatayer remains popular, modern chefs continuously introduce creative spins on this classic dish. For example, some variations incorporate spinach or herbs into the cheese filling for a fresh twist, while others may add spices like za’atar to enhance the flavor profile. These innovative takes keep the dish exciting and relevant, appealing to both locals and visitors alike.

Instructions

  1. Mix the flour, yeast, sugar and salt in a deep bowl. Make a pool in the center. Add warm milk and oil. Prepare a soft dough. Cover it with cling film, then with a cloth and let it ferment at room temperature for 15 minutes.

  2. While the dough is fermenting, prepare the cheese filling. Put the feta cheese in a bowl and mash it well with a fork. Add chopped parsley and dill on it. Finally, add 1 egg and mix well.

  3. Divide the fermented dough into 12 equal pieces. Shape the meringues by rolling them with the palm of your hand.

  4. Roll each piece into an ellipse. Place 1 tablespoon of the cheese mixture in the centre. Bring the short edges of the dough together and stick them together with your hands.

  5. Place the fatayers on the baking tray. Whisk 1 egg yolk with 1 tbsp milk and spread on the pastries. Sprinkle a pinch of nigella seeds each of them.

  6. Bake in a preheated 200 degree oven for 20 minutes. After coming out of the oven, Fateyer is ready to serve. Bon Appetit!
