Prepare the ingredients:

  1. Use the chicken thighs to process the chicken. Wash the chicken with diluted salt water or rub salt directly on the surface of the meat to clean it, then rinse with water.
  2. To keep the chicken sweet and chewy, boil the chicken over medium heat and add a crushed ginger branch to remove the fishy smell!
  3. When the meat is cooked, remove it from the pan and let it cool. Wear plastic gloves and tear the chicken into small, bite-sized pieces.
  4. Peel the onion, wash it, slice it thinly, then put it in a bowl of ice water, add 1 tablespoon of vinegar, soak for about 20 minutes to reduce the pungency, then remove it and drain.
  5. Peel the garlic, wash the chili, remove the seeds, and chop finely.
  6. Wash the cucumber and carrots, shred them.
  7. Roast the peanuts and crush them.
  8. Pick the tops of the Vietnamese coriander, wash them, and drain them.
  9. Cut the lemon in half and squeeze out the juice.

Mix the fish sauce:

  1. Mix the salad dressing in the following ratio: 3 tablespoons fish sauce, 3 tablespoons water, 2 tablespoons lime juice, 1 teaspoon sugar, chili and minced garlic.
  2. Stir until the sugar dissolves, then taste and adjust the seasoning to taste

Mix the salad:

  1. Prepare a large bowl or large pot, add the shredded chicken. Add 2 tablespoons of the mixed garlic and chili fish sauce and mix well, marinate for 5 minutes to let the spices soak in.
  2. Next, add the onions, cucumbers, carrots, Vietnamese coriander and 3 tablespoons of garlic juice to the bowl and mix well.
  3. Marinate the mixture for 15 minutes, then pour it onto a plate, sprinkle with crushed roasted peanuts and enjoy immediately.
