Clean and wash mint and coriander thoroughly, dry the water. Peel ginger and wash it.

Prepare the spices by grinding them finely. Put green coriander and mint in a jar, chop ginger into small pieces and add it, add black pepper, roasted cumin, sugar, asafoetida, black salt and plain salt, add some water and grind the spices very finely.

Put the ground spices in a jar and add 4 cups of cold water, mix well, squeeze out the lemon juice and mix it, fresh jaljira is ready.

Suggestion:
If you do not like sugar in Jalajeera, do not add it, but those who do not like too much sour and spicy food will like Jalajeera with sugar, because sugar corrects both the sour and spicy taste.
If you like to drink more spicy Jalajeera, then you can also grind 2 green chillies along with the spices.
If you are not adding cold water to Jalajeera, then you can serve it by adding ice cubes.
