Ingredients
  • 120 g butter
  • 200 g sweetened condensed milk
  • 250 g malt biscuits (crushed)
  • 180 g fruit-flavored soft lollies (like Eskimo lollies or marshmallows)
  • coconut (desiccated, for coating)
Instructions
  1. In a saucepan over low heat, melt the butter and condensed milk together. Stir until smooth and well combined. Allow the mixture to cool slightly.
  2. In a large mixing bowl, combine the crushed malt biscuits and chopped lollies.
  3. Pour the melted butter and condensed milk mixture into the bowl with the dry ingredients. Mix well until everything is evenly coated.
  4. Turn the mixture out onto a clean surface or baking paper. Shape it into a log about 5–6 cm (2 inches) in diameter.
  5. Roll the log in desiccated coconut until it is fully coated.
  6. Wrap the log in baking paper or plastic wrap and place it in the refrigerator for at least 4 hours, or until firm.
  7. Once firm, slice the lolly cake into pieces about 1–2 cm thick and serve.
