Ingredients
    For the Filling:
  • 100 ml water
  • 100 grams short grain rice
  • 500 ml milk
  • ½ tsp salt
  • 8 grams butter
  • For Crust:
  • 100 ml cold water
  • ½ tsp salt
  • 100 grams rye flour
  • 50 grams wheat flour
  • For moistening the pitas:
  • 100 ml milk
  • 50 grams butter
  • For Eggbutter:
  • 2 eggs (hard boiled)
  • 1 tbsp butter
  • salt (to taste)
Instructions
  1. Start by preparing the filling first. Put the water and rice in a small pot. Boil the rice until the water is absorbed.
  2. When the rice has absorbed the water and starts to swell, add the milk. Simmer for about 40 minutes, stirring occasionally.
  3. When the rice absorbs the milk, remove from the stove. Add salt and butter and mix well.
  4. To prepare the pita bread, add salt into the water and stir with a spoon until it dissolves.
  5. Add rye flour and wheat flour and mix with a spoon first. When the dough starts to solidify, knead it with your hands for 3-4 minutes.
  6. Stretch the dough by rolling it on the counter. Divide it into 8 equal pieces using a dough slicer.
  7. Roll out each piece and roll out into a round shape with a rolling pin.
  8. Put a spoonful of the cooled filling in the center of each round. Spread the filling all over the dough with a knife. Fold the edges inwards slightly and twist them with your thumb and forefinger to give them their final shape.
  9. When all the dough is finished, bake in an oven preheated to 250 degrees for 15 minutes.
  10. For the topping, melt the butter and add the milk. Put the warm mixture into a large bowl.
  11. Dip the pitas completely into the milk and butter mixture with the help of tongs. Turn them upside down and take them out.
  12. Roll out each piece and roll out into a round shape with a rolling pin.
  13. Put a spoonful of the cooled filling in the center of each round. Spread the filling all over the dough with a knife. Fold the edges inwards slightly and twist them with your thumb and forefinger to give them their final shape.
  14. When all the dough is finished, bake in an oven preheated to 250 degrees for 15 minutes.
  15. For the topping, melt the butter and add the milk. Put the warm mixture into a large bowl.
  16. Dip the pitas completely into the milk and butter mixture with the help of tongs. Turn them upside down and take them out.
  17. Place the soaked pitas on a serving plate.
  18. For the eggbutter, slice the eggs thinly. Add room temperature butter and mix well. Eggbutter is ready.
    Spread egg butter on the pitas that come out of the oven.
