Ingredients
  • 350 g wheat flour
  • 80 g butter
  • 1 egg
  • 1 tsp sugar
  • 2 tsp salt
  • 300 g white hard cheese (llanero) (or any type of melting cheese)
  • mild olive oil (for frying)
  • 1/2 cup water
Instructions
  1. Put the flour on the bench. Open the centre as a pool. Put the butter softened at room temperature, egg, salt and sugar into the centre. While slowly pouring the warm water into the centre of the pool, start to mix the flour gradually from the edges. Knead until you get an elastic dough.

    Since the amount of water may vary depending on the type of flour used, add the water in a controlled manner.
  2. Cover the prepared dough and rest it in the refrigerator for 45 minutes. Meanwhile, cut the cheese into strips and put it in the fridge. 

  3. Sprinkle flour over the dough. Divide the dough you rested in the fridge into meringues. Divide the dough with a rolling pin and cut into strips. Put the cheese you cut into the ends of the strips and roll the dough piece. Press the ends of the dough to make it stick. This step is important so that it does not open while frying.

  4. Put the oil in a frying pan, turn the heat on high and heat it. After the oil is heated, turn the heat to medium. Fry the prepared tequeños until golden and crispy.
