  1. In a large pot, bring the chicken broth to a boil. Add the rice or orzo pasta and cook until tender (about 15-20 minutes).
  2. While the rice is cooking, in a medium bowl, whisk together the eggs and lemon juice until well combined and slightly frothy.
  3. To prevent the eggs from curdling, slowly add a ladle of hot broth to the egg-lemon mixture while continuously whisking. Repeat with one or two more ladles of hot broth until the mixture is warm.
  4. Gradually pour the tempered egg-lemon mixture back into the pot with the remaining broth and rice, stirring continuously. Continue to cook over low heat, making sure the soup does not boil, until it thickens slightly.
  5. If using, stir in the shredded chicken and heat through.
  6. Taste and season with salt and pepper to your preference.
