Instructions

  1. For the lamb kleftiko, we start by first putting the pieces of meat in a large bowl.
  2. In a food processor, pulse the honey, garlic, oregano, juice, zest and paprika until smooth.
  3. Pour the mixture into the bowl with the meat and mix very well with our hands, so that the pieces are covered everywhere.
  4. Preheat the oven to 180°C, fan-forced.
  5. In a wide saucepan, heat the olive oil over medium to high heat and sauté the meat for 5-6 minutes, until it is well browned all over.
  6. Add the onion and salt and pepper and sauté for 2-3 minutes, until the onion is wilted.
  7. Deglaze with the wine, leave for 4-5 minutes for the alcohol to evaporate and add the broth (or water). Let it come to a good boil over high heat and remove the pot from the stove.
  8. Lay a large, double piece of parchment paper on the kitchen counter. In the center, place the peppers, tomatoes, potatoes and pieces of meat, along with some of the delicious juices from the pot.
  9. Sprinkle half the cheese slices on the meat. Scatter the rest over the vegetables.
  10. Roll the parchment paper tightly to form a package, and tie it in several places with string. Then wrap the entire package tightly in aluminum foil. Place the package in a baking pan and bake.
  11. Bake for about 2 hours, until the meat is tender.
  12. Remove the baking pan with the rack from the oven and carefully open the package from the top, cutting the strings as well.
  13. Increase the oven temperature to 200°C. Carefully place the baking sheet with the rack and the opened package back in the oven and bake for another 15-25 minutes, until the meat is golden brown.
  14. Carefully empty the contents of the package onto a large platter, scatter with the thyme and lemon zest and serve.
  15. Your traditional Kleftiko is ready. καλή όρεξη!
