The day before, let the beans rest in a container with water.

To prepare the rice, add 2 cups of rice and twice as much water, that is, 4 cups of water. When the water boils, add the rice and the bay leaf. Cook over medium heat for 15 minutes. Turn off the heat and let it rest for five minutes, covering the pot.

For the plantains, we are going to prepare a frying pan with oil. Cut the plantains into slices and fry them until they are golden, then let them rest on a plate with absorbent paper or kitchen paper.

We proceed to prepare the hogao. Cut the onion and tomato into cubes, chop the garlic into very small pieces. Sauté the onion in oil for 4 minutes, season with salt and add the tomato, add the garlic and cumin, mix well and cook for 2 minutes.

Drain the beans and put them in the pressure cooker, add the hogao. Cover with water and let cook for approximately 30 minutes.

In a frying pan, cook the meat and chorizo until golden brown. Then remove from the pan and fry the eggs in the same pan. In another pan, fry the pork rinds.

To assemble the bandeja paisa, place the rice, beans, slices, ground beef, chorizo, pork rinds, and egg (on top of the rice). Cut the avocado and add the corn arepas.
