Traditional Belarus Hash Browns: Draniki

Peel the potatoes and grate them with the fine part of the grater. To prevent the potatoes from darkening and to achieve the golden color of the Draniki, grate the onion and place it in the same bowl with the potatoes and mix. The onion juice will prevent the potatoes from browning.

If the potato mixture becomes too watery, you can pour off the accumulated water without squeezing too much. Add the flour, break the egg and mix. If the consistency is too watery, you can add some more flour. You need to achieve a slightly solid crepe dough consistency.

Add oil to the pan and heat it. Put balls of dough into the hot oil with your hand or a spoon and flatten them by pressing them with a spatula. The thickness of the hash browns should not exceed half a centimeter.

Fry your hash browns on both sides until golden brown.

Serve by pouring 1 tablespoon of sour cream over the fried hash browns. Bon Appetit!
You can also use yoghurt instead of sour cream for serving.
